MMM MMM Good!

Grab the ingredients out of the pantry and throw them in the crock pot. While the chili is cooking get your favorite blanket and book, curl up in your most comfortable chair next to the fire and enjoy the snow day, the laundry and dust will be there tomorrow!

White Chili (Paula Dean's Magazine)
5 cups chopped cooked chicken (I only used 2 breasts, because that's what I had thawed and it was fine)

3 - 15oz can of Great Northern Beans, drained (I used 2 because certain members of the fam don't like beans)

1 - 32oz box chicken broth

1 - 16oz jar mild salsa

1 - 8oz package Montery Jack Cheese w/ peppers, cubed (used plain Mont. jack shredded, once again, fine)

2 tsp. ground cumin

Place all in crockpot! What could be more easy than that, don't you just love the crockpot? Cook on High 3 hours, stir occasionally. Reduce to low; simmer 2 hours, stir occasionally. Garnish with cheddar cheese, sour cream and jalepenos, if desired. (We used the cheddar cheese and fresh cilantro, gotta love fresh cilantro!) Serve with corn chips (We are partial to Tostitos Scoops) ENJOY! :o)
